Can I use this as a 12 track mixer/recorder if I wanted to go with 12 mono sources?
Yes, you will just need 6x mono to TRS splitters, and they will need to be thin enough on the BLBX side so they don’t interfere with each other.
The Hosa brand ones I use are nice and thin for this.

How comfortable is it to multitrack and punch in/out? Can it overdub?
Very comfortable.
And yes, you can overdub.
As @darenager said, think of it as a digital multitrack recorder with a built in mixer and fx and you won’t go wrong.

How’s the headphones output on this? Im looking to use this with a couple of synths and monitor on Sennheiser HD600. Will it run them ok?

i use headphones with 250ohm impedance, so i reckon you will be fine.
