What does this mean ?
CYCLE The first played note is stolen first.
TRACK Track priority. Notes played on track 1 has priority over notes played on track 2, 3, and 4. Track
2 notes over track 3, 4 Track 3 notes over track 4.
LOW Lowest note is stolen first
HIGH Highest note is stolen first

I want to play one sound and hear 8 note polyphony can I do that ?

That’s all from the voice allocation section, which mostly doesn’t apply if you’re only using one track. Just make sure that the track you’re using has 8 voices allocated to it or D for dynamic (which is all about voice sharing and stealing from other tracks on the sequencer).

Yes, do as I have said above and you should have a fully working 8 voice synth track.

It’s set up to be a groove box with the sequencer at the very heart of it, which makes trying to just play it as a single timbre a bit of a pain in the ass.
Worth it once you get the hang of it though.
Be patient and take your time, your brain needs to acclimatise to the way of the Elektron.

Is there any way to change the shape of the envelopes ?
I would love to change the attack envelope to something exponential is that possible?

Nope, but you could route an exponential LFO to a parameter
