I am not sure about how many ch. i will get with one adat pair ( one optical cable in, one out) at 48khz. 8in, 8out ? Talking about pulse 16 offcourse

Correct. 2 cables for 16 channels (8 in/8 out) up to 48kHz. 4 cables for 32 channels (16 in/16 out).

It is also possible to configure up to 96kHz if required. Haven’t tried personally as I run my studio at 48kHz.

This thing is great, feels and works great, sounds fenomenal. I love how well thought out is everything, for example, it has ( excellent sounding ) headphone amp, and you can easily choose what are you monitoring, ch., but also where, before or after the converter .
