I want to change a parameter on the Blofeld and I have been kindly given a sysex breakdown of the messages that need to be sent but I don’t know if there are any controllers (hardware or software) than can be configured to have these applied to knobs or faders. Anyone?

It would help if you explained how you want to manipulate it - how regularly, what’s teh end game etc?
there’s not too many hardware controllers that support sysex string submission - they do exist, but it’s not going to be an easy ride
some sysex strings need a check calc at the end, so for sysex strings for Elektron dumps e.g. a hardware controller won’t do
You could look at Lemur on an iPad
Maybe Max on a computer - or Pd (it’s free)
If you only want to send short messages once in a while, there may be a way to script it in Logic - the environment was pretty capable iirc
You can prototype in Pd to learn how to construct the messages successfully and maybe do something on an arduino e.g.
it all depends on how you envisage using this control long term

On the Blofeld I want to change the bit depth value on the “triple fx” with a knob the same way as you would adjust filter cutoff etc.

. This is the best single box hardware solution for the kind of manipulation you’re trying to do.
Morningstar engineering foot pedals will send sysex. No knobs tho, but you could add an expression pedal to it. I use it to start stop my mpc and mute tracks on my DT.
Legacy Novation Remote SL also. SysEx strings can be edited directly on the device panel without using computer software (!).
